South Australia was first to bring in six o'clock closing, in March 1916, and the last state to drop it, when Premier Don Dunstan raised a glass just after six in September 1967. Adelaide's pub heritage runs deep, from the Edinburgh Castle, which traces its licence to 1837, to the Rob Roy, licensed continuously since 1840. Coopers, founded by Thomas Cooper in 1862 and still in family hands, is the largest Australian-owned brewery. Mind the glass names: here a schooner is 285 ml and a butcher smaller still.
