The 1850s gold rush left Victoria with a wealth of grand hotels, and Ballarat's Craig's Royal and Bendigo's Shamrock still recall the boom years. In Melbourne, Young and Jackson has stood opposite Flinders Street station since it opened as a hotel in 1861, with the painting ChloƩ on its walls since 1909. Six Melbourne brewing companies merged in 1907 to form Carlton & United, and the state kept six o'clock closing until 1966. Order a pot and you'll get 285 ml.
